We started with a small flock of pure bred Jacob sheep in 2008. Each year we have brought in a tup of a different traditional breed to vary and enrich the mix, which creates unique cross-breeds. This year's tup is a pedigree schwartbles. These animals roam freely all year round in our beautiful fields and woods.
We had a small flock of Soay sheep which is now mixed in with the others. These are much smaller than the Jacobs, and so you get smaller, sweeter joints and chops. 
​The mutton is delicious too! We also sometimes have hogget - this is a slightly older lamb but not yet mutton, very tasty indeed and still tender.
As with the beef, the sheep are taken to a local family farm for slaughter, a local butcher packs for us and we freeze on our premises - all of which reduces food miles.
