We started with a small flock of pure bred Jacob sheep in 2008. Each year we have brought in a tup of a different traditional breed to vary and enrich the mix, which creates unique cross-breeds. This year's tup is a pedigree schwartbles. These animals roam freely all year round in our beautiful fields and woods. We had a small flock of Soay sheep which is now mixed in with the others. These are much smaller than the Jacobs, and so you get smaller, sweeter joints and chops. The mutton is delicious too! We also sometimes have hogget - this is a slightly older lamb but not yet mutton, very tasty indeed and still tender. As with the beef, the sheep are taken to a local family farm for slaughter, a local butcher packs for us and we freeze on our premises - all of which reduces food miles.
